About me

If there is one thing you should know about me it is that I love food. I really mean it.

I was born and raised in a beautiful little town Poland’s north, right at the beach. I’m now living in London, where I moved in 2005. I’m happily married to the most amazing man, who also helps me with my food photography and I have a cat named Nala.

I love travelling and getting inspired by different cuisines.

My favourite food is potatoes. I’m crazy about them in any form, shape or kind.

Personally speaking, I haven’t always loved food, and food hasn’t always loved me. But that has changed now.



About this blog

Ania’s Vibrant Kitchen is an online recipe box, but it has become so much more. I’ve met so many wonderful people since I first started and I have learned so much about nutrition and diet. Now, since I’m battling my underactive thyroid, I enjoy the nourishing properties of my meals, but I also create delicious ”naughty recipes” for my friends and my hubby.

This site is a collection of my recipes that celebrates the pleasure of eating and cooking vibrant, delicious and wholesome food. I would really like you to see food as a masterpiece.

All the recipes that I post are made in my own kitchen with ingredients available at our local supermarket, farmer’s market or health food store.


My Philosophy


My intention is to make food that tastes good through using natural, organic and simple ingredients, whole grains, healthy fats, refined sugar alternatives and much more. All of my recipes are nutritionally balanced in a way that works well for my body. I enjoy sharing my love for healthy and nutritious food that can be easily made in the comfort of your own home. Most of my dishes are prepped in 10 minutes and cooked in under an hour.


Here you will find a variety of balanced recipes suitable for vegetarians, vegans, and meat eaters as well as those with gluten intolerance. I want you to try cooking from scratch, eating less processed food, and adding more plant-based protein sources and vegetables to your daily diet.  More importantly, I want you to enjoy and love what is on your plate.


When it comes to healthy living, it’s all about finding what works best for you and your family.

I do my best to pack this blog with valuable and practical content that can help you to find your relationship with food. However, I understand that eating is highly personal, unique, and there’s no substitute for individualized guidance and support.
