As you already know, I love Italian cuisine. After pasta, the risotto is definitely my favorite dish.
Because you can really go crazy with different ingredients and it will taste great anyway.
Today I have a recipe for you for a lemon risotto with smoked salmon and broad bean.
Suitable as a lunch or dinner with friends.
It is not a time-consuming dish, and what’s best is one-pot dish !!!!! Little cleaning as possible (something for me).
Here is the recipe, hope you will like it as much as me and my family.
Lemon risotto with smoked salmon and broad beans
- 1 cup risotto rice 250 g approximately
- 4 tbsp butter
- 2 tbps olive oil
- 1/2 cup leek chopped
- 3 cups of vegetable broth or chicken broth
- 1 clove of garlic
- black pepper
- 1/3 cup lemon juice
- 250 ml single cream
- 1 cup frozen or fresh broad beans
- fresh dill
- smoked salmon
- parmesan cheese
In a large pan, saute leek in 2 tablespoons of butter and 2tbsp of olive oil, until they are cooked and soft ( translucent).
Add the garlic and cook for another minute.
Add all the rice and stir it around on a small heat with the other ingredients to toast the grains thoroughly without burning them.
Raise the heat to high, add the first cup of stock. Allow the broth to reduce it until nearly all of the liquid is absorbed into the rice. Add the second cup of the stock. Add lemon juice, and seasoning. Keep adding the stock after gets absorbed by the rice.
Reduce the heat add broad beans, stir occasionally and cook covered 15-18 minutes (until the rice is just undercooked).
Cook until the rice is tender. Add fresh dill and the rest of the butter.
Mix in pices of smoked salmon.
Serve with more fresh dill, lemon wedge and parmesan cheese.
