Eton mess- my favorite English dessert

The Eton mess, is one of England’s loved and desserts, is an absolute joy to eat. Its sublime proportions of crumbled crisp meringue, softly whipped cream and fresh fruit – deliciousness.
So here is the recipe for a beautiful dessert.


Eton Mess - my favorite English recipe


  • 150 g raspberries plus extra to serve
  • 100 g peach jam
  • 100 g blueberries
  • 200 ml thickened cream lightly whisked
  • 55 gm icing sugar
  • ½ tsp vanilla bean paste


  • about 3 egg whites
  • 150 gm caster sugar
  • 15 gm cornflour
  • 1 tbp vinegar
  • pinch of salt


  1. For meringues, preheat oven to 120Whisk eggwhite and a pinch of salt in an electric mixer until firm peaks form (3-4 minutes). Gradually add the caster sugar and whisk until thick and glossy. Sieve icing sugar and cornflour over, fold to combine, then using a piping bag, make small meringues onto oven trays lined with baking paper. Bake until meringues lift easily from trays and are crisp but not colored 30-45min then turn off the oven and cool completely in the oven.
  2. Whisk cream and icing sugar and vanilla seeds together in a separate large bowl until soft peaks form.
  3. Spread serving dish with some jam with a quarter of the cream mixture, and coarsely crumble a quarter of the meringue over the top. Repeat layering with remaining ingredients (fruits).
  4. Serve Eton mess with raspberries and extra strawberries and blueberries​ and enjoy.
