I always have puff pastry in the fridge / freezer. You can really make a lot of tasty meals out of it. And probably now, when I go out shopping so little and I have a few rolls tucked away in the freezer, I will show you how to cook delicious things with it.
No now, here is the recipe.
Vegan apple and raspberry turnovers
- 1 sheet of puff pastry
- 6 tbsp of apple preserves alternative cut 3 apples into small chunks and fry them

- 2 tablespoons of melted coconut oil
Preheat the oven to 180 degrees with a fan or 200 up/down.
Cut the puff pastry into 13x13 cm squares. You will get six large cakes come out of one sheet.
Place a tablespoon of roasted apples, a few raspberries on each square.
Fold the opposite corner of the cake into a triangle. Use a fork to clamp the edges together.
Brush with oil, sprinkle with almonds.
Bake 20-23 min or until browned.
